How Many Variations Can You Come Up With For This Cookie Recipe?

I love this cookie recipe! I got it from Pinterest, the source of most of my new recipes. Click on the following link for it. Easy Snickerdoodle Cookies Without Butter Recipe – The Frugal South Note that the recipe is not mine. The original recipe at the link above, is for snickerdoodles, but anyone who knows me, knows that I like to alter things.

I first found this recipe during the beginning of our state’s first stay at home order during the pandemic. I was looking for dessert recipes without butter because I was running low on it. This recipe uses oil instead of butter. The other great thing is, the recipe is easy! Always a plus. As the pandemic has dragged on, I have made many variations of this cookie and all have been delicious. One special note, which is pointed out on the link, do NOT over bake these cookies or they will get hard.

Some variations I have made on the original recipe follow. Add the ingredients in addition to those in the original recipe:

  • 1 box lemon jello, 1 teaspoon ginger, and 1 Tablespoon milk (or almond milk), add almond slice on top
  • 1 box lime jello, 1 teaspoon ginger, and 1 Tablespoon milk
  • 1 box orange jello, 1 teaspoon ginger, 1/2 teaspoon almond extract, and 1 Tablespoon milk
  • 1 cup oatmeal, 1 Tablespoon milk, and optional-1/2 teaspoon almond extract
  • 1/3 cup baking cocoa, 1 Tablespoon milk
  • 1/3 cup peanut butter

Any of these variations could have the following added too:

  • chocolate chips, or any flavor chips
  • walnuts, pecans, almonds, etc.
  • coconut
  • dried dates, apricots, craisins, raisins, etc.

I stopped adding the sugar and cinnamon mixture from the original snickerdoodle recipe to the top of each cookie, only to save time and make it easier. You could continue to do this, if you wanted.

A Little Christmas

The Christmas spirit has arrived at our house. It began to snow late this morning. It was a calm, light fluffy snow. The kind that invokes thoughts of good cheer and peace.

So I got out our little tree and decorated it. All of our animals love the tree, but especially the cats. They take up residence underneath and you can find one or the other of them there for the season. After a few squirts of Bitter Apple chew deterrent, they stop chewing it for the rest of the season.

After lunch, I made a couple batches of cookies we traditionally have around the holidays. First, I baked the thumbprint cookies and filled them.

Molasses crinkles

Then I made molasses crinkles from a recipe handed down from my mother’s Aunt Clara. Mine are never as good as Aunt Clara’s but they are delicious nonetheless. I suspect Aunt Clara used lard in her’s.

Now I am ready to relax for the evening with a couple of cookies and a good book.

No Bakes

Here is my recipe for no bake cookies. I have been using it a lot recently because it is too hot to turn on the oven.

With just the two of us, I have been cutting the recipe in half and pressing it into an 8 x 8 pan.

Sometimes, I leave out the cocoa and press a handful of chocolate chips into the top while still warm. Today I used 1/2 vanilla and 1/2 almond extract. Substituting Nutella for the peanut butter would be delicious too.

Baking Day

The heat finally broke and we were out of bread and sweets, so it was time to bake this afternoon.

The bread is one quarter whole wheat flour and three quarters white flour. The cookies are lemon almond.

I could have scheduled a curbside pickup order for the bread, etc. but it seemed easier to just bake some. Definitely tastier.

I enjoy baking. I find it to be therapeutic. You take some simple ingredients, combine them, and end up with something that makes everyone happy!

Replenishing

Time to replenish, so today I made oatmeal raisin cookies with coconut, and also granola.

Also, my mother-in-law has been isolated for two weeks as have I, so we had a short visit, from a distance of 6 feet, with her yesterday. (There was a brief foray out for some necessities, but a mask and sanitizer was used.)

The best part of the visit, aside from seeing her, was we traded some library books! The libraries here are closed because of the coronavirus. I was getting antsy because I only had two library books left to read. Now I have an additional three!

So, life is, well, life. Which is good.

More Than Cookies

Pistachio Chocolate Chip Cookies

One of the many benefits of being retired is that I have time to really prepare for and enjoy the holidays. Not since I was in college have I had the time to enjoy baking and decorating the way that I am this season. And for me, a large part of that means baking!

The Pistachio Chocolate Chip Cookies are a family favorite. I have never had them actually last until Christmas. And this year promises to be no exception. But I did buy enough ingredients that I will be able to bake a second batch in time for the actual holiday.

Russian Tea Cakes

I came across a recipe for the Russian Tea Cakes when I was in late high school or maybe when I started college. These were a personal favorite of my mother’s and she always looked forward to me making them. I have also heard them called Snowballs. By either name, they are delicious.

Coconut Cookies

I love these Coconut Cookies at any time of year. They have a nice melt in your mouth, caramel taste because they contain both white and brown sugar. They are not necessarily a holiday cookie but I was on a reminiscent binge as I was baking.

Muddy Buddies

I did throw something new into the mix this year because I have been given Muddy Buddies as a gift and they are tasty. The recipe is not much of a secret as it is brought to us by the folks that make Chex cereal. Just check the box for the recipe. Does this mean that Muddy Buddies are a breakfast food? I vote yes!

At the rate we are going through these cookies, I anticipate baking some other kinds too. Maybe Aunt Clara’s Molasses Crinkles or Aunt Jane’s Candy Cane shaped cookies. When I was a kid we had two people who often gave us trays of assorted types of cookies as a Christmas gift. They were always much appreciated. Even then I knew what a special gift they were because of how much work it was to make this many kinds of cookies and because they were a labor of love. They are more than just cookies. To me, they represent thoughtfulness, caring, and wanting to share with those you care about.

That is why I am such a Christmas girl. Each year, I remember the traditions and kindnesses shared by so many people in my life. I want to relive them as well as share them others. Merry Christmas One and All!
